Today, we’re bringing out some hidden octopus from your kitchen to create a truly special dish! I’ve been craving takoyaki lately, but alas, the opportunity didn’t arise. So, I decided to make something wonderful with the octopus I had on hand. While it’s a different experience from takoyaki, this fried octopus is so addictive, you won’t be able to stop! Main Ingredients- 1 fresh octopus
- 1 green onion (scallion)
- 2 cups tempura flour
- 1 fresh egg
- 150ml cold water
- Mayonnaise (to taste)
- 3 handfuls of bonito flakes (katsuobushi)
Optional Ingredient (for extra flavor!)- 1 tbsp store-bought teriyaki sauce (check saltiness)

Cooking Instructions
Step 1
First, thoroughly wash and thinly slice the green onion. Finely chopping it will enhance the flavor of the fried dish.

Add the sliced green onion to the bowl containing the tempura flour. Mixing them beforehand ensures the green onion is evenly distributed in the batter.
Step 3
Now it’s time to prepare the star ingredient, the octopus. After cleaning it, cut the octopus into bite-sized pieces (about 2-3 cm). Cutting them too small might reduce the texture when fried, so maintaining a good size is key.

Toss the cut octopus pieces with the tempura flour. Coating them lightly with flour will help the batter adhere better.

Crack one fresh egg into the bowl with the flour-coated octopus. The egg will contribute to the crispiness and richness of the batter.

Now, let’s make the batter. Add the 150ml of cold water gradually, not all at once. Stir with a spoon or whisk until you achieve a slightly thick yet smooth consistency – it should be pourable but not too thin. The ideal batter will coat the back of a spoon lightly.

For a subtle seasoning, add a tiny pinch of salt to the batter. Be cautious not to add too much, as the fried octopus can become salty. Taste and adjust if necessary.

In a deep frying pan or pot, heat a generous amount of cooking oil over medium heat. Once the oil is hot enough (a drop of batter should sizzle and float immediately), dip the octopus and green onion pieces into the batter, ensuring they are well-coated, and carefully place them into the hot oil. Fry for about 3-4 minutes, or until golden brown and crispy. Avoid overcrowding the pan, as this can lower the oil temperature and result in soggy fritters.
Step 9
Once the octopus is perfectly fried, remove it from the oil and place it on paper towels to drain excess grease. Now, for an extra layer of flavor! Lightly drizzle with the optional teriyaki sauce for a boost of umami. However, since store-bought teriyaki sauce can be quite salty, we recommend using just one tablespoon and spreading it thinly.

Here comes the perfect partner for fried octopus – mayonnaise! Drizzle it generously to your liking. The creamy, rich mayonnaise complements the crispy octopus wonderfully, creating a fantastic flavor combination. Don’t overdo it, as too much might make it feel heavy.
