Main Ingredients- 1 block firm tofu
- 5-6 slices lotus root
- 5 Tbsp cornstarch
- 2 Tbsp cooking oil
- 80g lettuce
- 20g chicory
- A few cherry tomatoes
Tangy Sweet & Sour Sauce- 2 Tbsp soy sauce
- 1 Tbsp vinegar
- 1 Tbsp lemon juice
- 1 Tbsp corn syrup (oligo-dang)
- 1 tsp sugar
- 1/2 tsp minced garlic
- A little minced chili (red or green)
- A pinch of black pepper
- 2 Tbsp soy sauce
- 1 Tbsp vinegar
- 1 Tbsp lemon juice
- 1 Tbsp corn syrup (oligo-dang)
- 1 tsp sugar
- 1/2 tsp minced garlic
- A little minced chili (red or green)
- A pinch of black pepper
Cooking Instructions
Step 1
First, gently press the tofu to remove excess water. Cut it into bite-sized cubes, about 2-3 cm square. Thinly slice the lotus root. Thin slices will enhance the texture.
Step 2
Coat the prepared tofu cubes and lotus root slices evenly with cornstarch. Thoroughly coating them in cornstarch is key to achieving a crispy exterior after cooking. Lightly shake off any excess starch.
Step 3
Heat 2 tablespoons of cooking oil in a pan over medium heat. Carefully place the cornstarch-coated tofu and lotus root into the hot oil. Pan-fry them until they are golden brown and crispy on all sides. Ensure they are cooked through until a beautiful golden color appears.
Step 4
Now, let’s prepare the special sauce that gives Tofu Yurin-gi its signature flavor. In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp vinegar, 1 Tbsp lemon juice, 1 Tbsp corn syrup, 1 tsp sugar, 1/2 tsp minced garlic, a little minced chili, and a pinch of black pepper. Whisk everything together until well combined. The balance of tangy and sweet is crucial.
Step 5
Arrange the washed and dried lettuce and chicory attractively on a serving plate, forming a bed. Halve the cherry tomatoes and place them around the plate for color and a fresh contrast.
Step 6
Neatly arrange the golden-brown, crispy tofu and lotus root over the bed of greens on the plate. Generously drizzle the prepared tangy and sweet Yurin-gi sauce over the top. The contrast between the warm, freshly cooked tofu and the cool, zesty sauce is simply delightful.
Step 7
Your delicious Tofu Yurin-gi is now ready! The combination of warm, crispy tofu and lotus root with the refreshing sauce is truly fantastic. Serve immediately to enjoy the perfect ‘crispy outside, tender inside’ texture. Enjoy this healthy and delicious meal!
