Traditionally, pan-frying dumplings involves a lot of oil and can be messy with splattering oil. Today, we’ll make Gganpung Mandu, a delightful dish using the air fryer for maximum ease and speed. Of course, if you don’t have an air fryer, you can lightly pan-fry the dumplings in a bit of oil until golden and then proceed with the sauce. Shall we get started? Dumplings- 1/2 package frozen dumplings
Vegetables- 1 green chili pepper, finely diced (approx. 0.5cm)
- 1 red chili pepper, finely diced (approx. 0.5cm)
- 1/2 stalk green onion, thinly sliced (for garnish)

First, prepare the chili peppers that will add fragrance and a spicy kick. Wash the green and red chili peppers, remove the stems, and finely dice them into pieces about 0.5cm in size. Thinly slice the green onions; these will be used for garnish at the end to add freshness and visual appeal.

Arrange the frozen dumplings in a single layer in your air fryer basket, ensuring they don’t overlap. Lightly spray both sides of the dumplings with cooking oil for extra crispiness. (Use about 1 to 1.5 Tbsp of oil in total.) If you don’t have an oil spray, place the dumplings in a large bowl, drizzle with about 1.5 Tbsp of cooking oil, toss gently to coat, and then place them in the air fryer. First, air fry at 400°F (200°C) for 10 minutes. Then, flip the dumplings and continue to air fry at 350°F (175°C) for an additional 5 minutes, or until golden brown and crispy. Cooking times may vary depending on your air fryer and the size of the dumplings.
Step 4
While the dumplings are cooking, let’s make the Gganpung sauce. Heat a pan over high heat for 3 minutes, then reduce to medium heat. Add 1 Tbsp of cooking oil and stir-fry the diced chili peppers until fragrant. Once the aroma is released, add all the sauce ingredients: 4 Tbsp soy sauce, 1 Tbsp vinegar, 1.5 Tbsp sugar, 1/2 Tbsp minced garlic, 1/2 tsp black pepper, and 1 Tbsp cooking wine. Let the sauce simmer briefly until it just starts to bubble, then turn off the heat. Be careful not to overcook the sauce. Now, add the crispy air-fried dumplings to the sauce pan. Toss them over high heat for a minute or two until evenly coated with the sauce. Turn off the heat and stir in the sliced green onions. Your incredibly easy homemade Gganpung Mandu is ready!
