Main Ingredients- 1 Cucumber
- 1/2 Tbsp Coarse Salt (for washing cucumber)
- 1 Red Chili Pepper
Seasoning- 1/2 tsp Salt
- 1/2 Tbsp Anchovy Sauce
- 1 Tbsp Mayonnaise
- 1 Tbsp Vinegar
- 1 tsp Stevia (adjust sweetness to your preference)
- 1 Tbsp Minced Garlic
- A pinch of chopped Green Onion
- 1/2 tsp Salt
- 1/2 Tbsp Anchovy Sauce
- 1 Tbsp Mayonnaise
- 1 Tbsp Vinegar
- 1 tsp Stevia (adjust sweetness to your preference)
- 1 Tbsp Minced Garlic
- A pinch of chopped Green Onion
Cooking Instructions
Step 1
First, gently scrub the cucumber with coarse salt. This not only cleans the cucumber but also helps to maintain its crisp texture.
Step 2
Trim the ends of the cucumber. You can also peel the skin partially or in stripes for a more appealing look. Prepare the green onion by chopping it finely and mince the garlic. Wash the red chili pepper.
Step 3
Finely chop the red chili pepper, minced garlic, and chopped green onion for the seasoning. The smaller the pieces, the better the seasoning will be absorbed.
Step 4
Before slicing, place the cucumber in a resealable plastic bag and seal it. Then, gently hit the cucumber with the back of a knife or a rolling pin, ‘tang tang’. This prevents the cucumber from scattering everywhere when chopped and helps it absorb the seasoning better.
Step 5
Add 1 tablespoon of vinegar for the refreshing sourness of the cucumber ‘Tangtangyi’. You can add more if you prefer a tangier taste.
Step 6
Add 1 teaspoon of stevia for sweetness. You can substitute this with sugar, and adjust the amount of sweetness according to your preference.
Step 7
Add 1/2 tablespoon of anchovy sauce for a savory depth of flavor. You can use fish sauce or soy sauce as alternatives.
Step 8
Add 1/2 teaspoon of salt to balance the flavors. It’s best to adjust the amount of anchovy sauce and salt based on the cucumber’s moisture and your taste.
Step 9
Add 1 tablespoon of minced garlic for its aromatic flavor. The amount of garlic can be adjusted to your liking.
Step 10
Add 1 tablespoon of the finely chopped green onion. The fresh aroma of the green onion will enhance the overall taste of the cucumber ‘Tangtangyi’.
Step 11
Add 1 tablespoon of mayonnaise for a creamy and savory finish. The mayonnaise makes it incredibly smooth and rich.
Step 12
Add the pre-chopped red chili pepper. Its vibrant color makes the dish look even more appetizing.
Step 13
Finally, sprinkle with sesame seeds. Mix all the ingredients well, and your crispy, delicious cucumber ‘Tangtangyi’ is ready! It tastes best when served immediately while chilled.
