Let’s transform carrots, often used as a supporting ingredient, into the star of the dish! We’ll make a sweet, sour, and spicy carrot salad, also known as ‘carrot kimchi.’ This vegan recipe adds a touch of freshness to any meal.
Main Ingredients- 1 Carrot (approx. 150g)
Seasoning for Salad- 1 tsp Minced Garlic
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 1 tsp Sugar
- 1 Tbsp Plum Extract (Maesil Extract)
- 1 tsp Salt
- 2 Tbsp Vinegar
- 1 tsp Toasted Sesame Seeds
- 1 tsp Minced Garlic
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 1 tsp Sugar
- 1 Tbsp Plum Extract (Maesil Extract)
- 1 tsp Salt
- 2 Tbsp Vinegar
- 1 tsp Toasted Sesame Seeds
Cooking Instructions
Step 1
First, wash and prepare 1 carrot (approximately 150g). Cut the carrot in half lengthwise, then slice it into long, julienne strips about 0.5cm thick, following the grain of the carrot. Try to keep them a consistent thickness so they cook evenly; too thin and they might break apart easily.
Step 2
Take the julienned carrots from the previous step and cut them slightly thicker. Aim for strips that are about 0.5cm in width. This thicker cut will help maintain a satisfyingly crisp texture when mixed. You can use a mandoline slicer for faster and more uniform cutting.
Step 3
Transfer all the julienned carrots into a large mixing bowl. Now, add all the seasoning ingredients: 1 tsp minced garlic, 1 Tbsp gochugaru, 1 tsp sugar, 1 Tbsp plum extract, 1 tsp salt, and 2 Tbsp vinegar for that essential tangy flavor.
Step 4
Gently mix the seasoning with the carrots using your hands, ensuring everything is evenly coated. Be careful not to overmix, as this can make the carrots lose their crispiness. Finally, sprinkle in 1 tsp of toasted sesame seeds for a nutty aroma and give it one last gentle toss. Your delicious carrot kimchi or carrot stir-fry is now ready!
