Crispy on the outside and naturally sweet on the inside, they’re a hit with everyone, young and old! Perfect as a substantial snack or for those moments when hunger strikes. Let’s get started!
Ingredients- 3 large sweet potatoes
- Vegetable oil, for deep-frying (ample amount)
Cooking Instructions
Step 1
Begin by thoroughly washing the sweet potatoes under running water. Then, use a peeler or a knife to remove all the skin.

The key to great sweet potato sticks is their thickness! Aim for a consistent thickness of about 3mm when slicing them into sticks. This ensures a delightful texture when fried. Slices that are too thin might break, while those too thick might not cook through properly.
Step 3
As soon as you’ve sliced the sweet potatoes, place them immediately in a bowl of cold water. This step is crucial for removing excess starch, which leads to crispier fries and less oil absorption. Soaking for about 10 minutes is sufficient.
Step 4
After soaking, drain the sweet potato sticks in a colander to remove as much water as possible. Gently pat them dry with paper towels to absorb any remaining moisture. This is important to prevent oil splattering during frying.
Step 5
Now, it’s time to fry! Pour a generous amount of vegetable oil into a deep-frying pot or wok. Heat the oil to approximately 170°C (338°F). (You can test the oil temperature by inserting a wooden chopstick; if small bubbles form around it, the oil is ready). Carefully add the sweet potato sticks to the hot oil. Initially, the sticks might clump together; resist the urge to stir them right away. Let them fry undisturbed until they start to firm up, then gently separate any stuck-together sticks with chopsticks.
Step 6
Watch for the moment the sweet potato sticks begin to turn a light golden brown – this is the critical point! Over-frying will make them tough. Remove them from the oil as soon as they start to color slightly. This technique ensures they remain tender inside while achieving a perfectly crispy exterior.
Step 7
Place the fried sweet potato sticks on a plate or tray lined with paper towels. This will help absorb any excess oil. Let them cool for a few minutes. While delicious when warm, they become even crispier as they cool down.
