Onions have been cherished vegetables since ancient Egyptian times, known for their ability to help dissolve cholesterol and lower blood pressure. While onions are available year-round now, fresh spring onions harvested from early June to early winter are particularly sweet and crisp. I’ve previously shared recipes for pickled onions using fresh onions, but today, I’m excited to introduce a diet-friendly meal featuring these wonderful spring onions. This dish involves stir-frying onions until they are delightfully sweet, then serving them over a bed of multigrain rice. Topped with a perfectly fried egg, it becomes a low-calorie rice bowl that’s both nutritious and satisfying. It’s an ideal simple meal for busy days and a guilt-free option for those on a diet. Let’s get started with this flavorful stir-fried onion and healthy onion recipe!

Ingredients

  • 1 Korean spicy pepper (achigoi)
  • 1 medium onion
  • 1 fresh egg
  • 100g cooked multigrain rice

Seasoning

  • 1 Tbsp olive oil
  • 1 Tbsp soy sauce
  • 1 Tbsp oligosaccharide

Cooking Instructions

Step 1

First, peel and thoroughly wash the onion. Slice it into thick strips, about 0.5cm thick. For the spicy pepper, remove the stem, cut it in half lengthwise, carefully scoop out the seeds, and then finely chop it into small pieces (about 1cm).

Heat a frying pan over medium-high heat and add 1 tablespoon of olive oil. Add the sliced onions and begin to stir-fry. As the onions become translucent, they will start to release their natural sweetness and soften. Stir-fry for about 2-3 minutes.

Once the onions are translucent, push them to one side of the pan. Pour 1 tablespoon of soy sauce and 1 tablespoon of oligosaccharide directly into the pan and let it bubble for a moment to slightly caramelize. Add the chopped spicy pepper to the pan and stir-fry everything together with the onions over high heat. Quickly toss for about 1-2 minutes, ensuring all ingredients are evenly coated with the sauce. The key is to maintain a crisp texture!

In a separate frying pan, lightly grease it and crack the egg to fry. Cook it to your preferred doneness. A runny yolk that can be mixed in is delicious, so consider that! Fry the egg beautifully to prepare it for plating.

Arrange 100g of warm multigrain rice nicely in a serving bowl. Carefully place the golden-fried egg on top of the rice.
