Main Ingredients- Dried shrimp 1/2 cup (standard paper cup size)
Seasoning Ingredients- 1 Tbsp Soy sauce
- 2 Tbsp Wine or Sake (removes fishiness and adds flavor!)
- 2 Tbsp Sugar (leveled, adjust sweetness to your preference)
- 1 Tbsp Cooking oil
- 1 Tbsp Corn syrup or Oligosaccharide (for shine and sweetness)
- 1 Tbsp Soy sauce

Cooking Instructions
Step 1
First, prepare the dried shrimp. If there are any visible dust or debris on the shrimp, gently wipe them clean with a paper towel. If the shrimp are very large, breaking them into smaller pieces will make them easier to eat.
Step 2
In a pan, combine the soy sauce, wine (or sake), sugar, cooking oil, and corn syrup. Place over medium-low heat and stir until the seasonings are well blended.
Step 3
Once the mixture begins to simmer, reduce the heat slightly and continue to cook for about 30 seconds. This helps dissolve the sugar and slightly thicken the sauce. Be careful not to overcook, as it can burn.
Step 4
When the sauce is bubbling gently, add the prepared dried shrimp. Now, increase the heat to medium and stir continuously with a spatula, cooking the shrimp until they are coated and slightly glazed with the sauce. Constant stirring is key to prevent burning.
Step 5
The addition of wine (or sake) might make the color appear a bit darker initially, but it ensures a crispy and delicious dried shrimp stir-fry without any fishy smell! It’s an excellent side dish for rice. Try serving it over a bowl of warm rice.
