Ingredients- 1 medium sweet potato
- 1 cup tempura flour (or all-purpose flour)
- 1/2 tsp dried parsley (optional)
- Vegetable oil for deep frying (ample amount)
Cooking Instructions
Step 1
Since we’re using the sweet potato skin, thoroughly scrub the sweet potato under running water with a brush to remove any dirt or impurities. For extra flavor, you can add dried herbs like parsley or basil to the tempura flour.
Step 2
Slice the clean sweet potato into approximately 5mm thick pieces. Slicing them too thinly might cause them to break, while slices that are too thick will take longer to cook through. Aim for a consistent, moderate thickness.
Step 3
Place the sliced sweet potato in a bowl of cold water and let it soak for about 10 minutes. This step helps to remove excess starch, which contributes to a crispier fried texture and prevents the slices from sticking together. Drain the sweet potato and rinse lightly. Then, place them in a colander to drain off some excess water, but don’t let them dry out completely, as this can affect how well the batter adheres.
Step 4
To the drained sweet potato slices, add 1 tablespoon of tempura flour and the optional dried parsley. Gently toss to coat each slice with a light dusting of flour. This ‘dry coating’ helps the main batter stick better.
Step 5
In a separate bowl, combine the remaining tempura flour with ice-cold water, adding it gradually. Whisk until you achieve a smooth, relatively thin batter. The consistency should be like that of thin pancake batter – not too thick, which would make the coating heavy, and not too thin, which would cause it to slide off.

Dip each floured sweet potato slice into the prepared batter, ensuring it’s evenly coated. Allow any excess batter to drip off slightly before frying.
Step 7
Heat a generous amount of vegetable oil in a pot or deep fryer to around 170°C (340°F). A good test is to drop a small bit of batter; it should sizzle and float up immediately. Carefully place the battered sweet potato slices into the hot oil, a few at a time to avoid overcrowding. Fry for about 1-2 minutes, until the coating just starts to firm up and turn lightly golden. Remove them from the oil and set aside.
Step 8
Let the partially fried sweet potato slices cool for a few minutes. This allows steam to escape, further enhancing crispiness. Increase the oil temperature slightly to around 180°C (350°F). Re-introduce the cooled sweet potato fries into the hot oil and fry for an additional 1-2 minutes, or until they are golden brown and perfectly crisp. This double-frying method is the secret to achieving that delightful crispy outside and tender inside!
