Main Ingredients

  • 3 Apples (sweet variety recommended)
  • 1 Carrot
  • 1 Green Onion
  • 3 leaves of Early Cabbage (or regular cabbage leaves)

Kimchi Seasoning

  • 2 Tbsp Minced Garlic
  • 3 Red Chilies (seeds removed)
  • 3 Tbsp Gochugaru (Korean chili flakes, adjust to taste)
  • 1 Tbsp Saeujeot (fermented salted shrimp, finely chopped)
  • 1 Tbsp Fish Sauce (anchovy or other)
  • 1/2 Tbsp Salt (adjust to taste)
  • 1 Tbsp Sesame Seeds (for garnish)

Cooking Instructions

Thoroughly wash the apples under running water. To remove any potential pesticide residues, soak them in a mixture of baking soda and vinegar for about 30 minutes. Afterward, rinse them again under clean water and pat them dry.

In a blender, combine the minced garlic, deseeded red chilies, chopped saeujeot, and fish sauce. Blend until smooth. If you like, you can also add a small piece of onion here for extra flavor. In a bowl, mix the blended paste with gochugaru and salt until well combined, creating your flavorful kimchi seasoning.

Core the prepared apples and cut them into bite-sized cubes (about 2cm or 3/4 inch). Cutting them into uniform, manageable pieces ensures a pleasant eating experience.

Dice the carrot into pieces similar in size to the apple cubes. Slice the green onion into manageable lengths. (Tip: If you’d like to add onion, dice it now to mix in, or blend it with the other seasoning ingredients for a smoother texture and integrated flavor.)

In a large mixing bowl, combine the cubed apples, diced carrots, sliced green onions, and the prepared early cabbage leaves (or regular cabbage). Pour the prepared seasoning over the ingredients. Gently toss everything together until evenly coated with the seasoning. Finally, sprinkle with sesame seeds for a nutty aroma to complete your delicious and visually appealing Apple Kimchi!
