- 70g cake flour (or all-purpose flour)
Moist Muffin Batter
- 85g room temperature butter
- 25g vegetable oil (such as grapeseed or canola oil)
- 150g sugar
- 2 room temperature eggs
- 220g cake flour (or all-purpose flour)
- 8g baking powder
- 1 pinch salt
- 50g milk
- 170g frozen blueberries (reserve some for decoration)
- Powdered sugar (for dusting, optional)

Step 1
First, let’s make the delicious streusel topping. In a bowl, combine the cold butter (60g) and sugar (120g). Use a spatula or your fingertips to rub and combine them until the mixture resembles coarse crumbs. Aim for a texture similar to soft-serve ice cream.

Once the butter and sugar are well combined, sift the cake flour (70g) over the mixture. Gently rub the ingredients together with your fingertips until they form crumbly clusters. The texture should feel slightly gritty. Once done, place the streusel in a bag and refrigerate until needed.

Now, let’s prepare the moist muffin batter. In a large bowl, cream together the room temperature butter (85g), vegetable oil (25g), and sugar (150g). Beat with an electric mixer or a whisk until the mixture is light, fluffy, and the sugar granules are mostly dissolved, creating a smooth, creamy consistency.
