Main Ingredients

  • 120g Dried Small Shrimp
  • 80g Minced Beef
  • 4cm Green Onion
  • 1 clove Garlic

Stir-Fried Dried Shrimp Seasoning

  • 2 Tbsp Soy Sauce
  • 1 Tbsp Sugar
  • Pinch of Black Pepper
  • 1/2 tsp Sesame Oil
  • Pinch of Toasted Sesame Seeds
  • 1 tsp Corn Syrup

Cooking Instructions

Step 1

First, we’ll make the ‘Stir-Fried Dried Shrimp’. Heat a dry pan over medium-low heat. Once the pan is sufficiently hot, add the dried small shrimp without any oil and stir-fry for 2-3 minutes. This process helps to remove any fishy smell and enhances their crispiness and nutty flavor.

Step 2

Lightly coat the pan used for stir-frying shrimp with cooking oil. Push the shrimp to the side of the pan. In the center of the pan, add 1 tsp soy sauce, 1/2 tsp sugar, 1 tsp corn syrup, and 3 Tbsp water. The seasoning mixture will start to bubble.

Step 3

Once the seasoning boils, bring the shrimp from the sides to the center and stir-fry together with the sauce for about 1 minute. Mix well to ensure the sauce evenly coats the shrimp. Just before turning off the heat, drizzle with sesame oil and sprinkle with toasted sesame seeds to finish. You’ll have a delicious stir-fried dried shrimp dish with an excellent savory and slightly sweet taste.

Step 4

Now, let’s make the ‘Jangttokttokyi’. In a bowl, place the minced beef and carefully pat dry any blood from the surface using paper towels. Removing the blood is crucial for eliminating any gamey odor. Add 1 Tbsp soy sauce, 1/2 Tbsp sugar, 1/2 tsp sesame oil, toasted sesame seeds, and a pinch of black pepper. Also, add all the prepared minced green onion and minced garlic.

Step 5

Gently mix the seasoned minced beef with chopsticks or your hands. It’s important not to knead the meat too vigorously. Instead, gently mix it along the grain of the meat, breaking it up so it doesn’t clump, and ensure the seasoning is evenly distributed.

Step 6

Finally, heat a pan with a little cooking oil and add the seasoned minced beef. Stir-fry over high heat, cooking quickly and being careful not to burn the meat. As the beef cooks, it will combine with the delicious seasoning, creating a wonderful Jangttokttokyi. This dish is so good, it’ll make you finish a whole bowl of rice in no time!
