  • 1/4 head of cabbage
  • 1/4 carrot
  • 2 fresh shiitake mushrooms (or rehydrated dried shiitake mushrooms)
  • 1.5 Tbsp brown rice oil (or cooking oil)

First, remove the core from the cabbage and slice it into approximately 0.5 cm thick strips. Wash and peel the carrot, then julienne it to a similar thickness as the cabbage. Trim the stems from the fresh shiitake mushrooms and thinly slice the caps (about 0.3 cm thick). If using dried shiitake mushrooms, rehydrate them in lukewarm water for at least 30 minutes, then squeeze out excess water.

Heat a pan over medium heat and add 1.5 tablespoons of brown rice oil (or your preferred cooking oil). Add the julienned cabbage, carrot, and shiitake mushrooms. Stir-fry gently with a spatula for about 2-3 minutes, ensuring the vegetables don’t stick to the pan. The key is to stir-fry them until they are tender-crisp, retaining a slight crunch.

Once the vegetables start to soften slightly, add 1/2 tablespoon of minced garlic and continue to stir-fry. When you can smell the garlic, add salt to taste. Start with a small amount and adjust as needed. After seasoning with salt, mix all the ingredients evenly in the pan. Stir-fry for another 30 seconds to allow the flavors to meld, then turn off the heat.

While the pan is still hot (off the heat), freshly grind black pepper over the vegetables for added aroma. Finish by drizzling in 1 teaspoon of sesame oil and sprinkling 1 teaspoon of sesame seeds (or crushed sesame seeds). Gently toss everything together.
