Main Ingredients

  • 600g Fresh Bean Sprouts
  • 1/2 large Green Onion (approx. 50g)
  • 2 Korean Chili Peppers (Cheongyang)

Seasoning Ingredients

  • 5 Tbsp Soy Sauce
  • 2 Tbsp Red Pepper Flakes (Gochugaru)
  • 1 Tbsp Minced Garlic
  • 1/2 Tbsp Sugar (adjust to taste)
  • 1 tsp Natural Seasoning (e.g., kelp powder, anchovy powder)
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

Rinse the fresh bean sprouts thoroughly under running water. Drain them lightly in a colander and place them in a wok or a wide pan. Add about 4 tablespoons of water around the edges of the pan. Using less water helps keep the bean sprouts crisp and prevents them from becoming mushy.

Step 1

Step 2

Cover the pan with a lid and steam over medium heat for about 2-3 minutes, just until a light steam forms. The bean sprouts should begin to release their own moisture and become slightly tender. Be careful not to overcook, as this will diminish their crunchiness.

Step 2

Step 3

Remove the lid. Add 5 tablespoons of soy sauce, 2 tablespoons of red pepper flakes, 1 tablespoon of minced garlic, and 1/2 tablespoon of sugar to the pan. Drizzle about 1-2 tablespoons of canola oil or cooking oil generously over the ingredients. Increase the heat to high and stir-fry quickly to prevent the seasonings from burning. It’s important to toss the bean sprouts and seasonings rapidly with chopsticks or a spatula to ensure they are evenly coated.

Step 3

Step 4

Finely chop the green onion. Remove the seeds from the Korean chili peppers and chop them finely as well. If you prefer it spicier, you can increase the amount of chili peppers or add them a little later in the cooking process to retain their fresh, pungent aroma. Stir-fry for another minute after adding the green onions and chili peppers to release their fragrance.

Step 4

Step 5

Finally, add 1 tablespoon of toasted sesame seeds and 1 teaspoon of natural seasoning. Stir everything together lightly to combine. Natural seasoning adds a wonderful umami depth, so be sure to include it! Once all the ingredients are well incorporated, turn off the heat and serve your delicious stir-fried bean sprouts.
