Korean green peppers and anchovies are a fantastic combination! Typically, this dish is made with medium or large anchovies, but today we’ll try it with small, crispy anchovies. I’ll also share my secrets for achieving that perfect crispiness. Enjoy this savory and slightly sweet side dish that pairs wonderfully with rice.
Main Ingredients- 1 cup small dried anchovies (stir-fry them in a dry pan to remove fishiness, then sift to remove fine dust)
- 10 Korean green peppers (wash, remove stems, and cut in half)
- 1/4 stalk scallion (finely chopped)
Seasoning- 2 Tbsp cooking oil
- 1/2 Tbsp soy sauce (Guk-ganjang or Jin-ganjang recommended)
- 1/4 Tbsp minced garlic
- 2 Tbsp honey (adjust sweetness to taste)
- 1 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
First, thoroughly wash the Korean green peppers under running water. Remove the stems and cut them in half for easier eating. Their mild spiciness will beautifully complement the sauce.
Step 2
To get rid of any fishy smell and achieve a delightful crispiness, heat a dry pan over medium-low heat. Add the small dried anchovies (about 1 cup) without any oil and stir-fry for 2-3 minutes. After stir-frying, sift the anchovies using a fine-mesh sieve to remove any fine dust, ensuring a cleaner taste and texture.
Step 3
Now, add 2 tablespoons of cooking oil to the pan. Then, add 1/4 tablespoon of minced garlic. Gently fry over low heat to create a fragrant garlic oil. Be careful not to burn the garlic; frying it slowly allows its aroma to fully infuse the oil.
Step 4
Once the fragrant garlic oil is ready, add the halved Korean green peppers to the pan and stir-fry over medium heat for a minute or two until they soften slightly. When the peppers begin to wilt, pour in 1/2 tablespoon of soy sauce to add depth of flavor and a nice color.

Add the pre-stir-fried anchovies to the pan and quickly toss with the green peppers to ensure they are evenly coated with the sauce. Next, drizzle in 2 tablespoons of honey, coating the peppers and anchovies with a pleasant sweetness. Finally, add the finely chopped scallions and mix everything together swiftly. You can even turn off the heat and let the residual heat finish cooking for maximum flavor.
Step 6
Transfer the finished stir-fried anchovies and Korean green peppers to a serving plate. Sprinkle 1 tablespoon of toasted sesame seeds over the top for a nutty aroma and visual appeal. This dish is a perfect side that will have you reaching for more rice. Enjoy your delicious creation!
