Step 1
Today, we’re making ‘Stir-Fried Anchovies’, a fantastic side dish for rice. Their crispy texture and savory flavor are perfect, making them an excellent addition to kids’ lunch boxes.
Step 2
First, to remove any fishy smell and make the anchovies extra crispy, dry-roast them in a pan over low heat for about 3-5 minutes without any oil. When they release their moisture and become fragrant, turn off the heat and set the roasted anchovies aside to cool.

Next, let’s prepare the seasoning sauce that will bring out the flavor of the anchovies. In a small bowl, combine 1 Tbsp soy sauce, 1 Tbsp mirin, and 1 tsp sugar. Stir well until the sugar is dissolved. Meanwhile, heat a generous amount of cooking oil in a pan over medium-low heat. Add the thinly sliced garlic and sauté slowly to infuse the oil with garlic aroma, creating garlic oil. It’s even better if the garlic slices become golden and slightly crispy.

Once the garlic oil is ready, pour the prepared seasoning sauce into the pan and let it simmer briefly. Once the sauce starts to bubble, reduce the heat to low. Add all the cooled, roasted anchovies to the pan. Stir well with a spatula to ensure the sauce coats the anchovies evenly. Continue stir-frying for another 2-3 minutes. Be careful not to overcook, as this can make the anchovies too hard. Finally, drizzle in 1 tsp of sesame oil and sprinkle with some toasted sesame seeds, giving it a final mix. Your delicious stir-fried anchovies are ready to be enjoyed over a warm bowl of rice!
