I found a leftover dried squid in my freezer and had a fresh one too, so I decided to fry them together! While anything deep-fried is delicious, squid fritters are arguably one of the best, loved by all ages. One bite offers a satisfying crunch from the batter and a tender, moist squid inside that makes you crave more. They are perfect as a snack for kids, a late-night bite, or even a great accompaniment to a cold beer! Let’s make some irresistible squid fritters right now!
Main Ingredients- 1 Fresh Squid
- 1 Dried Squid Body (soaked in water overnight to soften)
Crispy Batter- 1 1/2 Cups Tempura Flour
- 1 1/2 Cups Cold Sparkling Water or Water
- A few ice cubes (to keep the batter cold for extra crispiness!)
Homemade Tartar Sauce- 1 Hard-boiled Egg
- 5 Tbsp Mayonnaise
- 1/2 Tbsp Mustard
- 1 Tbsp Oligosaccharide
- 2 Tbsp Finely Chopped Pickles
- 2 Tbsp Finely Chopped Onion
- 1 Tbsp Lemon Juice
- 1 tsp Chopped Parsley
- Pinch of Salt
- Pinch of Pepper
- 1 1/2 Cups Tempura Flour
- 1 1/2 Cups Cold Sparkling Water or Water
- A few ice cubes (to keep the batter cold for extra crispiness!)
Homemade Tartar Sauce- 1 Hard-boiled Egg
- 5 Tbsp Mayonnaise
- 1/2 Tbsp Mustard
- 1 Tbsp Oligosaccharide
- 2 Tbsp Finely Chopped Pickles
- 2 Tbsp Finely Chopped Onion
- 1 Tbsp Lemon Juice
- 1 tsp Chopped Parsley
- Pinch of Salt
- Pinch of Pepper
Cooking Instructions
Step 1
First, prepare the squid. Since dried squid is tough, soak it in lukewarm water the day before to soften it. Clean the fresh squid thoroughly.
Step 2
Cut the prepared fresh and soaked dried squid into bite-sized pieces, about 1.5-2 cm wide. Cutting them too thinly might make them tough when fried, so aim for a moderate thickness.
Step 3
Now, let’s make the crispy batter, the soul of squid fritters! In a bowl, combine 1 1/2 cups of tempura flour with 1 1/2 cups of cold sparkling water or regular water. Add a few ice cubes to keep the batter refreshingly cold. Use chopsticks to mix lightly until some flour streaks are still visible – overmixing will lead to a heavy, soggy coating! Using sparkling water creates bubbles, resulting in a much crispier texture.
Step 4
Dip the cut squid pieces into the batter, ensuring they are evenly coated. It’s best to fry them immediately after coating to prevent the batter from becoming soggy. Heat your frying oil to about 160℃ (320℉). Carefully add the squid pieces one by one into the hot oil. Listen to that delightful sizzling sound as they fry! Once golden brown, remove the squid fritters and drain them on paper towels. For even greater crispiness, you can fry them a second time.
Step 5
Let’s make the perfect partner for squid fritters: tartar sauce! Finely chop the hard-boiled egg, onion, and pickles for the tartar sauce. Mincing them as finely as possible is key to achieving a smooth and pleasant sauce texture.
Step 6
Combine the finely chopped egg, onion, and pickles with mayonnaise, mustard, oligosaccharide, lemon juice, chopped parsley, salt, and pepper in a bowl. Mix well until everything is incorporated. This homemade tartar sauce is much fresher and richer in flavor than store-bought options!
