Squid and Chive Pancake
Does the sound of rain make you crave some savory pancakes? We’re sharing a recipe for squid and chive pancake, where chewy squid meets fragrant chives for a delightful combination. Perfect for a rainy day or any time you need a delicious treat!
Ingredients- 300g fresh chives
- 2 cups pancake mix (1 cup = 200ml)
- 2 cups water
- 1 squid, cleaned and prepared
- 1/2 carrot
- 1 red chili pepper (for color)
- 4-5 Korean green chili peppers (adjust to spice preference)
- 1 Tbsp dried shrimp powder
- 1 Tbsp dried anchovy powder
- 1/2 tsp black pepper
- Vegetable oil for frying
Cooking Instructions
Step 1
In a large mixing bowl, combine the pancake mix and black pepper. Gradually pour in the water while whisking or stirring with a spatula until you achieve a smooth, lump-free batter. Aim for a consistency that’s not too thick or too thin.
Step 2
Thoroughly wash the chives and cut them into approximately 4cm lengths. Peel and thinly julienne the carrot. Cut the prepared squid into bite-sized pieces. Finely chop the red chili pepper and green chili peppers. Add all the prepared vegetables, squid, dried shrimp powder, and dried anchovy powder to the batter. Mix everything gently until well combined. Be careful not to overmix.
Step 3
Heat a frying pan over medium heat and add a generous amount of vegetable oil. Once the pan is hot, ladle about one full ladle of the batter onto the pan. Spread it thinly into a round shape using the back of the ladle or a spatula. Spreading it thinly is key to achieving a crispy texture.
Step 4
Once the edges of the pancake start to turn golden brown and appear set, carefully flip it over with a spatula. Cook the other side until it’s also golden brown and crispy. Once both sides are beautifully golden and crisp, your delicious squid and chive pancake is ready to serve! Enjoy it hot.
