It’s a complete one-bowl dish that requires no additional side dishes. We recently made this wonderfully crisp soybean sprout rice. The seasoning sauce was made with wild chives, hardy survivors from the garden weeds, bringing a taste of spring even when it’s not quite here. The delightful crunch of the soybean sprouts and the refreshing flavor of the wild chive sauce evoke the feeling of springtime. Enjoy this hearty and flavorful dish, perfect for a solo meal.
Soybean Sprout Rice Ingredients- 200g Rice (approx. 1.5 cups)
- 150g Fresh Soybean Sprouts
Spring-Infused Wild Chive Sauce Ingredients- 1 handful Wild Chives (washed and finely chopped)
- 1 Korean Green Chili Pepper (seeds removed, finely minced)
- 1 Red Chili Pepper (seeds removed, finely minced)
- 5 Tbsp Soy Sauce (Guk-ganjang or Jin-ganjang)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 3 Tbsp Mirin (cooking wine)
- 1 Tbsp Fish Sauce (for added umami)
- 1 Tbsp Toasted Sesame Seeds (crushed)
- 2 Tbsp Sesame Oil
- 1 handful Wild Chives (washed and finely chopped)
- 1 Korean Green Chili Pepper (seeds removed, finely minced)
- 1 Red Chili Pepper (seeds removed, finely minced)

Cooking Instructions
Step 1
When cooking rice with moist ingredients like soybean sprouts, it’s crucial to reduce the amount of cooking water. Since soybean sprouts release a lot of moisture, use slightly less water than you normally would for the same amount of rice. (e.g., for 1.5 cups of rice, use about 1.2 cups of water).
Step 2
Rinse the fresh soybean sprouts thoroughly under running water. Remove any loose skins or damaged parts, and drain them well to remove excess moisture. This step is essential for preventing a raw smell and ensuring delicious rice.
Step 3
Place the washed rice into your rice cooker. Then, spread the drained soybean sprouts evenly over the top of the rice. For even better distribution, you can gently mix them into the rice.
Step 4
Start the cooking cycle on your rice cooker. Once the water begins to boil, reduce the heat to low and allow the rice to steam. This steaming process ensures the soybean sprouts are cooked through and the rice becomes perfectly fluffy. (Approx. 15-20 minutes).
Step 5
After the cooking cycle is complete and the rice has finished steaming, gently fluff the rice with a rice paddle. Be careful not to mash the rice grains. Mix the rice and soybean sprouts together evenly.

With this freshly cooked, warm soybean sprout rice and a side of savory wild chive sauce, you can enjoy a satisfying and delicious meal without needing any other side dishes. It’s perfect for a solo dining experience!

To make the wild chive sauce, combine the finely chopped wild chives, minced green and red chilies, soy sauce, gochugaru, mirin, fish sauce, toasted sesame seeds, and sesame oil in a bowl. Mix well until fully combined. If wild chives are unavailable, finely chopped green onions can be used as a substitute to create a delicious sauce.
Step 8
