Prepare 600g of whole pork belly, ideally a cut suitable for boiling. Rinse it thoroughly under cold water and pat it completely dry with paper towels. Ensuring the surface is dry is crucial for achieving a crispy skin.

Season the dried pork belly evenly on all sides with salt and black pepper. Gently massage the seasonings into the meat to ensure they adhere well.

Prepare the whole garlic cloves by lightly smashing them with the side of a knife or slicing them into halves or thirds. Arrange the smashed or sliced garlic and the 5 bay leaves over the pork belly.
