  • 50g all-purpose flour for a light batter
  • Tempura flour, as needed, for extra crispiness
  • 50g water to achieve the right batter consistency
  • 1 egg to bind the batter

  • 0.5 Tbsp salt (optional, adjust to taste)
  • 0.5 Tbsp sugar (optional, for a hint of sweetness)

Cooking Instructions

Step 1

In a mixing bowl, combine the all-purpose flour (50g), water (50g), and egg. Whisk until you have a smooth batter with no lumps. The consistency should be neither too thick nor too thin. If using, stir in the salt and sugar. This batter will form the base coating for your shrimp.

Step 2

Dip each prepared shrimp into the batter, ensuring it’s evenly coated. Gently roll the shrimp to help the batter adhere well. This first coating helps the subsequent layer stick better.

Step 3

Next, place the tempura flour on a separate plate. Roll the battered shrimp in the tempura flour, coating them thoroughly. Lightly shake off any excess flour. This tempura coating is key to achieving a wonderfully crispy texture.

Preheat your frying oil to 160°C (320°F). If using an induction cooktop like the Queen Induction with its frying function, set it to 160 degrees. Carefully lower the flour-coated shrimp into the hot oil, being careful not to overcrowd the pan. Maintaining the correct oil temperature is crucial for crispiness.

Step 5

Fry the shrimp for about 2-3 minutes, turning them occasionally, until they are golden brown and perfectly crispy. Avoid over-frying, which can make them tough.
