First, prepare 4 potatoes. It’s crucial to shred them as thinly as possible. While for stir-fried potatoes, we often rinse them to remove starch to prevent sticking, for these shredded potato pancakes, we are not using any external flour or starch. We rely solely on the potato’s own moisture and starch. Therefore, do not soak the shredded potatoes in water to remove starch. Maintaining the potato’s natural stickiness is the key.
Step 3
Place the thinly shredded potatoes into a bowl. Now, add about 3 Korean Cheongyang chilies, finely chopped, for a touch of heat. If you don’t like spicy food or prefer it milder, you can omit the chilies. We personally enjoy a little spice, so we’re adding them generously.
Step 4
Heat a frying pan over medium-low heat and add a generous amount of vegetable oil. Spread the shredded potatoes thinly and evenly in a circular shape in the pan. It’s important to pan-fry them until they are golden brown and crispy on both sides.
