Crispy and Flavorful Shredded Cabbage Salad – Just Like Kimchi!
Enjoy the delightful crunch and refreshing taste of this shredded cabbage salad! Prepared in a style reminiscent of kimchi, it offers a perfect balance of savory and tangy flavors. A fantastic side dish that adds a satisfying texture to any meal.
Main Ingredients- 1/2 head of cabbage (approx. 500g)
- 1/4 carrot (approx. 30g)
Kimchi Seasoning- 1.5 Tbsp coarse salt (for wilting cabbage)
- 2 Tbsp red pepper flakes (gochugaru)
- 1/2 Tbsp toasted sesame seeds
- 1/2 Tbsp ginger syrup (or 1/2 tsp minced ginger)
- 1/2 Tbsp plum extract (for sweetness and depth)
- 1/2 Tbsp minced garlic
- 1 Tbsp fish sauce (anchovy or sand lance)
- 1.5 Tbsp coarse salt (for wilting cabbage)
- 2 Tbsp red pepper flakes (gochugaru)
- 1/2 Tbsp toasted sesame seeds
- 1/2 Tbsp ginger syrup (or 1/2 tsp minced ginger)
- 1/2 Tbsp plum extract (for sweetness and depth)
- 1/2 Tbsp minced garlic
- 1 Tbsp fish sauce (anchovy or sand lance)
Cooking Instructions
Step 1
First, remove the core from the cabbage and thinly slice it into shreds about 0.5 cm thick. Julienne the carrot to a similar thickness. (Carrot adds color.) Place the shredded cabbage in a bowl and sprinkle with 1.5 Tbsp of coarse salt. Gently toss to coat and let it wilt for about 10 minutes. You don’t need to salt the carrots separately. Salting the cabbage makes it crispier and removes excess moisture, preventing it from becoming soggy.
Step 2
Rinse the wilted cabbage under cold running water 2-3 times. Be gentle to preserve its crispiness; vigorous washing can make it lose its texture. After rinsing, drain thoroughly in a colander. You can gently squeeze out excess water with your hands.
Step 3
Now, let’s prepare the kimchi-style seasoning! In a bowl, combine the drained cabbage and julienned carrots. Add 2 Tbsp red pepper flakes, 1/2 Tbsp toasted sesame seeds, 1/2 Tbsp ginger syrup, 1/2 Tbsp plum extract, 1/2 Tbsp minced garlic, and 1 Tbsp fish sauce. These ingredients will meld together to create a delicious, kimchi-like flavor.
Step 4
After adding all the seasoning ingredients, gently mix everything with your hands until well combined. To maintain the cabbage’s crisp texture, mix quickly rather than for an extended period, ensuring the seasoning is evenly distributed. Transfer the finished shredded cabbage salad to a serving dish. This salad is wonderfully refreshing and delicious, especially when you need a flavor boost!
