Do you often have leftover bean sprouts after enjoying shabu-shabu? Don’t let them go to waste! Here’s a super easy bean sprout side dish recipe that takes less than 5 minutes to make. It’s perfect as a simple side for any meal!
Main Ingredients- 200g fresh bean sprouts
Seasoning (Tablespoon Measurements)- 1 Tbsp minced garlic
- 0.5 Tbsp salt (or soy sauce, adjust to taste)

- A pinch of toasted sesame seeds (optional)

Cooking Instructions
Step 1
First, gently rinse the bean sprouts under running water to remove any debris and ensure they are clean. Drain them briefly in a colander.

Bring a pot of water to a rolling boil over high heat. Once the water is boiling vigorously, add the cleaned bean sprouts and blanch them for exactly 1 minute. The key is to keep them crisp!
Step 3
As soon as the minute is up, turn off the heat and immediately rinse the blanched sprouts under cold running water to stop the cooking process and cool them down. This step helps maintain their vibrant green color and satisfying crunch. Drain them thoroughly in a colander, pressing out as much water as possible. Excess water can make the dish taste bland.

Place the drained bean sprouts in a mixing bowl. Add all the prepared seasoning ingredients: 1 tablespoon of minced garlic, 0.5 tablespoon of salt (or soy sauce), and 1 tablespoon of sesame oil. If you like, sprinkle in a pinch of toasted sesame seeds for extra flavor and visual appeal.
