First, it’s important to wash the scallions thoroughly. Instead of rinsing under running tap water, it’s best to submerge them in a bowl filled with plenty of water and wash them gently. This method effectively removes dirt and debris. Rinse them several times and drain well.

Cut the cleaned 130g of scallions into approximately 5cm lengths, making them easy to eat. If they are too long, the seasoning might not penetrate well, and they can be difficult to handle. Cutting them to a suitable length is recommended.

Peel and thinly slice the 1/2 medium onion. The slight sharpness of the onion will blend with the seasoning to enrich the flavor of the scallion kimchi.
