Super Simple Tortilla Corn Cheese for Easy Meals – Loved by Everyone!
Hello everyone! It’s Ryul here. Today, I made Tortilla Corn Cheese! It’s a delicious combination of sweet corn, creamy mayonnaise, gooey cheese, and a crispy tortilla. This dish is a crowd-pleaser for all ages, perfect as a snack, a late-night treat, or even as an appetizer with drinks. It’s incredibly easy to follow, making it ideal for those living alone!
※If you don’t have an oven, you can cook it over low heat with a lid on, until the cheese is fully melted. Of course, using an oven will make it even tastier!
Key Ingredients- 2 Tortillas
- 1/2 small Onion
- 50g Frozen Peas (or canned peas)
- 100g Canned Sweet Corn (drained)
- 15g Sugar (approx. 1.5 Tbsp)
- 2 Tbsp Mayonnaise
- 30-50g Mozzarella Cheese
- Pinch of Dried Parsley (for garnish)
- Pinch of Black Pepper
Cooking Instructions
Step 1
First, peel and wash the onion thoroughly. Finely dice it into small pieces, about the same size as the sweet corn kernels (0.5cm or smaller). Dicing it this small will result in a much smoother texture.
Step 2
In a large bowl, combine the finely diced onion, drained peas, and drained sweet corn. If using frozen peas, rinse them under cold water to thaw, then squeeze out any excess water before adding.
Step 3
Now it’s time for seasoning. Add a pinch of black pepper and 15g of sugar (about 1.5 tablespoons by measuring spoon). The sugar will complement the sweetness of the corn and enhance the overall flavor.
Step 4
Add 2 tablespoons of mayonnaise. Gently mix until all the ingredients are just combined and the mixture is smooth, being careful not to mash the corn kernels too much.
Step 5
Take a tortilla and spread the corn and mayonnaise mixture thinly and evenly over its surface. Make sure to spread it all the way to the edges for maximum flavor.
Step 6
Sprinkle 30-50g of mozzarella cheese generously over the corn mixture, according to your preference. Finally, sprinkle some dried parsley on top for a nice visual appeal and added aroma.
Step 7
Now, it’s time to bake! Place it in a preheated oven at 200°C (400°F) for about 8 minutes, or until the cheese is melted and golden brown. If you don’t have an oven, you can cook it in a frying pan over low heat with a lid on until the cheese is completely melted. This Tortilla Corn Cheese is best enjoyed immediately while it’s hot!
