Main Ingredients- 1 packet Ramen (Nongshim Shrimp Flavored Ramen recommended)
- 1 head Bok Choy
- 7 fresh Shrimp
- 1 Tbsp Cooking Wine (Mirin or Sake)
- 1 Tbsp Oyster Sauce
- 1 Tbsp minced Scallions (Green Onions)
- 1/2 Tbsp minced Garlic
- 1/4 Onion
- 1/4 Green Bell Pepper
- 1/4 Red Bell Pepper
- 1/4 Yellow Bell Pepper
- 200ml Water
Thickening Slurry- 2 Tbsp Cornstarch or Potato Starch
- 2 Tbsp Water
- 2 Tbsp Cornstarch or Potato Starch

Cooking Instructions
Step 1
Having all your ingredients prepped will make the cooking process much smoother. Wash all vegetables thoroughly and pat them dry. Peel and devein the shrimp.
Step 2
Boil the ramen noodles and the dried vegetable packet in boiling water for about 1 minute less than the package instructions suggest. Immediately rinse the cooked noodles under cold water to firm them up, then drain them thoroughly in a colander. It’s crucial to remove excess water, as it can cause oil to splatter when frying.
Step 3
In a wide pan, heat a generous amount of cooking oil over medium heat. Carefully place the drained noodles into the hot oil, ensuring they don’t overlap too much. Laying the noodles evenly will help them fry uniformly and achieve the best texture.

Fry the noodles over medium-low heat, turning them occasionally, until both sides are golden brown and crispy. For extra crispiness, fry them longer. If you prefer a softer texture, you can lightly fry them or pan-fry them in a bit of oil until golden.

While the noodles are frying, prepare the vegetables for the sauce. Trim the base of the bok choy, separate the leaves, and chop them into large pieces. Chop the onion, green bell pepper, red bell pepper, and yellow bell pepper into similarly sized pieces.

In a separate pan, heat a small amount of cooking oil over medium-low heat. Add the minced garlic and minced scallions and sauté until fragrant. Be careful not to burn the garlic; cook until it’s lightly golden and aromatic.

Once the garlic is fragrant, add the prepared shrimp and onion to the pan. Increase the heat to high and stir-fry quickly. Add 1 Tbsp of cooking wine (mirin or sake) to the shrimp to remove any fishiness and enhance flavor.

When the shrimp start to turn pink, add the chopped green bell pepper, red bell pepper, and yellow bell pepper. Stir-fry for just another minute or two to keep the vegetables crisp. Then, pour in 200ml of water and bring the sauce to a boil.

Once the sauce is boiling, stir in 1 Tbsp of oyster sauce for a rich umami flavor. You can adjust the amount of oyster sauce to control the saltiness.

Use the seasoning packet from the ramen to adjust the saltiness further if needed. Tip: Since the cornstarch slurry will thicken the sauce and mellow its flavor, it’s okay to make the sauce slightly saltier than you normally would.

Add the prepared bok choy leaves to the sauce and cook briefly, just until they are slightly tender but still retain some crunch. Avoid overcooking them, as they can become mushy.

In a small bowl, whisk together the cornstarch (or potato starch) and water until smooth to create the slurry. Gradually add the slurry to the simmering sauce, a tablespoon at a time, stirring constantly until you reach your desired thickness. Once the sauce has thickened, remove from heat. If included, stir in the post-cooking shrimp oil from the ramen packet for extra flavor.
