First, wash the potatoes thoroughly, peel them, and cut them into thin matchsticks. Soak the julienned potatoes in cold water for about 10 minutes to remove excess starch. This step is key to preventing them from sticking together and ensuring a better texture when stir-fried. Drain them completely. Slice the Vienna sausages into bite-sized pieces. Chop the green onions finely.

Now, heat a generous amount of cooking oil in a pan over medium heat. Add the julienned potatoes and stir-fry until they are about halfway cooked and turning slightly translucent. Once the potatoes are semi-cooked, add the sliced Vienna sausages and continue to stir-fry them together. Be gentle to avoid breaking the potatoes.
