Chive Pancake: A Must-Make for Rainy Days! Revealing the Secret to Deliciousness
I love chive pancakes loaded with seafood. Adding dried shrimp, in particular, makes them wonderfully crispy and savory with every bite! You absolutely must try making this.
Ingredients- 200g Chives
- 1/4 Onion
- A little Carrot
- 3 Korean Green Chilies (Cheongyang peppers)
- 600ml Water
- 400g Pancake Mix (Buchim Garu)
- 2 handfuls Dried Shrimp
Cooking Instructions
Step 1
Wash the chives thoroughly under running water and pat them dry. Cut them into bite-sized pieces, about 5cm long.
Step 2
Finely julienne the onion and carrot. Remove the seeds from the Korean green chilies and finely chop them for a touch of heat. (Tip: Slicing the vegetables as thinly as possible will help the pancake cook evenly and become extra crispy.)
Step 3
In a large bowl, combine the cut chives, onion, carrot, and green chilies. Add 600ml of water and 400g of pancake mix.
Step 4
Using a spatula or chopsticks, mix everything together until no dry flour remains, forming a batter. Check the consistency and adjust by adding more pancake mix if it’s too thin, or a little water if it’s too thick, aiming for a smooth, pourable consistency. (A consistency similar to thick yogurt is ideal.)
Step 5
Heat a frying pan over medium heat and add a generous amount of oil. Ladle the batter onto the pan and spread it out as thinly as possible into your desired shape. Spreading it thinly is key to achieving a crispy texture.
Step 6
Once the edges of the batter start to turn lightly golden and crispy, carefully flip the pancake using a spatula. Gently press down with the spatula after flipping to ensure it’s spread evenly and thinly. (If you wait until it’s too cooked, it might break or be difficult to spread, so flipping when the edges are just starting to crisp is important.)
Step 7
Cook until both sides are golden brown and crispy. Remove the finished pancake from the pan and set aside on a plate.
Step 8
To the remaining batter, add the 2 handfuls of dried shrimp (washed and drained). Mix well. The savory flavor of the shrimp will make the pancake even more special.
Step 9
Cook the shrimp-infused batter using the same method: heat oil in a pan over medium heat, ladle, spread thinly, and cook until golden brown on both sides.
