  • 1-2 pinches salt (for pre-seasoning)
  • Cooking oil, generous amount (for frying)

Batter Ingredients

  • 2 large eggs
  • 1/2 Korean green chili pepper, finely minced
  • 1/2 red chili pepper, finely minced
  • 1.5 Tbsp curry powder
  • 1.5 Tbsp tempura flour (or all-purpose flour)
  • 1 tsp salt (for batter seasoning)

The first secret to crispy tofu is removing excess moisture. Lay out paper towels generously on a clean surface, place the tofu block on top, cover with more paper towels, and gently press to absorb as much water as possible.

Cut the tofu into bite-sized pieces (e.g., about 3×4 cm). Sprinkle 1-2 pinches of salt evenly over the cut surfaces and let it sit for about 10 minutes. This pre-seasoning adds depth of flavor.

In a bowl, crack in the 2 eggs. Add the finely minced green and red chili peppers. Then, add 1.5 Tbsp of curry powder, 1.5 Tbsp of tempura flour, and 1 tsp of salt. Whisk everything together until well combined and smooth, forming the batter.

Gently place the pre-seasoned tofu pieces into the batter. Carefully coat each piece of tofu with the batter, ensuring it adheres well without breaking the tofu. Aim for a thin, even coating; a thick batter can make the tofu greasy.
