Main Ingredients

  • 5 handfuls of Dol-gim (stone seaweed), generous amount

Seasoning

  • 12 Tbsp grapeseed oil
  • 2 Tbsp salt (adjust to taste)
  • 8 Tbsp sugar (adjust to taste)
  • 4 Tbsp sesame oil
  • 2 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, tear the prepared Dol-gim seaweed into small, bite-sized pieces. Loosening any clumps will help the seasoning distribute evenly and ensure the gim-jaban stays crispy when stir-fried.

Step 2

In a wide wok or pan, add 12 Tbsp of grapeseed oil and preheat over very low heat. Be careful, as the oil can burn if it gets too hot.

Step 3

Once the pan is gently heated, add the torn Dol-gim seaweed and stir-fry slowly over low heat. Gently stir to prevent the seaweed from breaking apart. It’s important to fry until the seaweed is coated with oil and has a slightly glossy appearance.

Step 4

When the Dol-gim seaweed is evenly coated with grapeseed oil and looks slightly glossy, add the prepared seasoning ingredients in order. First, add 2 Tbsp of salt and 8 Tbsp of sugar, mixing them well with the seaweed. You can adjust the seasoning to your preference. The seaweed might become slightly sticky as the sugar melts, so continue stirring over low heat. Finally, add 4 Tbsp of sesame oil and 2 Tbsp of toasted sesame seeds, and stir-fry quickly one more time to infuse the flavors.

Step 5

Once all the seasonings are well incorporated and the seaweed has a nice sheen, turn off the heat and immediately transfer the Gim-jaban to a serving dish. Allow it to cool completely before storing it in an airtight container to maintain its crispiness for a long time.
