  • Dried Shrimp (approx. 2 handfuls) 100g: Adds a crispy texture and savory aroma.
  • Garlic Scapes 11 stalks: Provides a fresh, crisp texture and a mild garlic flavor.
  • Minced Garlic 1 Tbsp: The magic ingredient to enhance the overall flavor!
  • Sesame Oil 1 Tbsp: Adds a nutty aroma to finish the dish.

Sauce

  • Soy Sauce 2 Tbsp: Establishes the savory base. (measured with a tablespoon)
  • Oyster Sauce 2 Tbsp: Adds umami and depth of flavor. (measured with a tablespoon)
  • Cooking Wine (Mirin etc.) 2 Tbsp: Helps remove any unwanted odors and enhances the flavor. (measured with a tablespoon)
  • Water 1 Shochu glass (approx. 50ml): Helps the sauce mix well.
  • Corn Syrup 2 Tbsp: Adds a subtle sweetness and a glossy finish. (measured with a tablespoon)

Cooking Instructions

First, prepare the dried shrimp. Heat a dry pan over medium-low heat, add the dried shrimp, and stir-fry for 2-3 minutes until fragrant and slightly toasted. This step removes any fishy odor and makes the shrimp crispier and more flavorful.

Let’s make the delicious sauce for our stir-fry! In a bowl, combine soy sauce (2 Tbsp), oyster sauce (2 Tbsp), cooking wine (2 Tbsp), corn syrup (2 Tbsp), and water (1 shochu glass, about 50ml). Stir well until the corn syrup is dissolved. Using a tablespoon for measurement makes it even easier!

Wash the garlic scapes thoroughly. Heat 1-2 Tbsp of cooking oil in a pan over medium heat. Add minced garlic (1 Tbsp) and stir-fry until fragrant. Then, add the prepared garlic scapes and stir-fry for about 2-3 minutes until they turn a vibrant, appealing green and are tender-crisp.

Once the garlic scapes have turned a bright green, pour all the prepared sauce into the pan. Let it simmer over medium heat for about 1 minute, allowing the sauce to thicken slightly and coat the ingredients. Be careful not to let it burn.

After simmering the sauce for 1 minute, add the prepared dried shrimp to the pan. The reduced sauce will now coat the dried shrimp beautifully.
