How to Make Delicious Kim Muchim from Stale Gim | Lunchbox Side Dish & Simple Pantry Staple
Don’t throw away your stale gim (seaweed)! Transform it into a flavorful side dish. It’s the perfect accompaniment to rice.
Main Ingredients- 10 sheets of gim (stale gim recommended)
- 20g green onion (white part, about 1/4 stalk)
- 1 red chili pepper
Seasoning Ingredients- 1 Tbsp red chili powder
- 5 Tbsp soy sauce (regular)
- 2 Tbsp plum extract (for sweetness and umami)
- 1 Tbsp sugar (adjust to taste)
- 2 Tbsp cooking wine (like mirin, removes odor and adds flavor)
- 1/2 Tbsp minced garlic
- 1 Tbsp sesame oil (for rich nuttiness)
- 1 Tbsp toasted sesame seeds or sesame paste
- 1 Tbsp red chili powder
- 5 Tbsp soy sauce (regular)

Cooking Instructions
Step 1
First, prepare your stale gim. Heat a dry pan over medium-low heat. Place the gim sheets on the pan and toast for 1-2 minutes per side until crispy. Toasting until the gim is brittle will ensure a good texture even after seasoning. Be careful not to burn it!
Step 2
Once the gim is toasted and slightly cooled, tear it into bite-sized pieces, about 3-4 cm in size. Tearing them a bit larger prevents the seasoning from clumping later.
Step 3
Finely chop the white part of the green onion. Deseed the red chili pepper and mince it finely. The chili pepper adds color and a hint of spice, so feel free to adjust the amount or use a spicier variety if you prefer.
Step 4
In a small bowl, combine all the seasoning ingredients: 1 Tbsp red chili powder, 5 Tbsp soy sauce, 2 Tbsp plum extract, 1 Tbsp sugar, 2 Tbsp cooking wine, and 1/2 Tbsp minced garlic. Stir well to create a flavorful sauce. Ensure the sugar is fully dissolved.
Step 5
Place the torn gim pieces into a large bowl. Add the chopped green onion and minced red chili pepper. Pour the prepared seasoning sauce over the gim.
Step 6
Using your hands or a spatula, gently mix the seasoning into the gim until evenly coated. The key is to mix gently to avoid breaking the gim too much. It’s almost ready!
Step 7
Finally, add 1 Tbsp sesame oil and 1 Tbsp toasted sesame seeds. Toss lightly one more time. The delicious Kim Muchim is ready when you can smell the rich aroma of sesame! Serve immediately in a dish for a wonderful side. Store any leftovers in an airtight container in the refrigerator.
