Main Ingredients- 1/2 Korean radish (approx. 300g)
- 2 stalks of green onion

Step 1
First, wash the Korean radish thoroughly and peel it. Then, julienne it as thinly as possible, about 1-2mm thick. Cutting the radish thinly is key to allowing the seasonings to penetrate well, resulting in a crispier and more flavorful salad.
Step 2
Place the julienned radish in a bowl and add 2 tablespoons of red pepper flakes. Gently mix with your hands, ‘joom-joom’ style, to coat the radish. Coating it with red pepper flakes first helps prevent the radish from releasing too much water and allows the seasoning to absorb better. Ensure the flakes are evenly distributed without clumps.
Step 3
Now, let’s add all the seasoning ingredients and mix thoroughly. Add 3 tablespoons of vinegar, 2 tablespoons of fish sauce, 1 tablespoon of sugar, 1 tablespoon of plum extract, and 1 tablespoon of minced garlic (if using). Gently toss everything together with your hands until the seasonings are well combined and don’t clump.
Step 4
Wash and finely chop the green onions, then add them to the radish mixture. Taste the salad and adjust the seasoning by adding the salt (start with 1 tsp) if needed, until it’s just right for your palate. Give it another gentle toss to ensure all ingredients are well incorporated. Finally, sprinkle with sesame seeds just before serving for an extra nutty aroma and flavor!
