Last weekend, I had some leftover rice in the fridge, so I decided to make a delicious fried rice by adding crunchy radish kimchi and sweet king crab meat. Here’s a simple yet impressive fried rice recipe perfect for a satisfying meal.
Main Ingredients- 100g Radish Kimchi (Chonggak Kimchi)
- 1/2 stalk Scallion
- 2 Eggs
- 100g King Crab Meat (or regular crab meat)
- 2 Tbsp Minced Garlic
- A little Cooking Oil
Cooking Instructions
Step 1
First, finely chop the radish kimchi into bite-sized pieces. Finely slice the scallions. Crack the eggs into a bowl, whisk them well, then cook them thinly like an omelet over low heat. Once cooled, julienne the omelet. (Tip: Preparing the egg omelet in advance adds vibrant color and texture to your fried rice.)
Step 2
Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add the sliced scallions and gently stir-fry over low heat to release their aroma. Once the scallions start to turn golden, add the minced garlic and sauté until fragrant. (Tip: Generously making scallion oil deepens the overall flavor of the fried rice.)
Step 3
When the scallion and garlic are fragrant, add the chopped radish kimchi and king crab meat. Stir-fry quickly over medium heat. Once the kimchi’s sourness slightly dissipates and the crab meat is cooked, add the rice. Break up any clumps of rice with a spatula and mix it well with the radish kimchi and crab meat, stir-frying until evenly combined.
Step 4
Once the fried rice ingredients are well mixed, push the rice to one side of the pan. Pour the whisked eggs into the empty space. As the eggs begin to set, gently mix them with the rice, stir-frying until they coat the rice grains smoothly. This is the key to a tender texture.
Step 5
When the rice is cooked and fluffy, reduce the heat to low. Drizzle in 1 tablespoon of sesame oil and sprinkle in some sesame seeds (adjust to your preference) for a fragrant finish. Stir-fry a couple more times to ensure all ingredients are evenly distributed.
Step 6
Finally, artfully arrange the julienned egg omelet over the fried rice. Sprinkle with more sesame seeds and crumbled seaweed (gim) to complete your delicious Radish Kimchi and King Crab Fried Rice. Enjoy while it’s warm!
