Crispy Radish and Seaweed Salad (Muparae Muchim)

We’ve created a vibrant red salad with crunchy radish and flavorful seaweed, bringing the essence of the ocean to your table.
Main Ingredients
- 1 pack of Laver (Gim/Nori), rinsed if salted
- Radish, appropriate amount (about 150g)
Salad Dressing
- 1 Tbsp minced garlic
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp anchovy sauce (or fish sauce)
- 1 Tbsp tuna extract (optional, for umami)
- 1 Tbsp oligosaccharide (or honey/sugar for sweetness)
- A pinch of sesame seeds
- 1 Tbsp minced garlic
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp anchovy sauce (or fish sauce)
- 1 Tbsp tuna extract (optional, for umami)
- 1 Tbsp oligosaccharide (or honey/sugar for sweetness)
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, let’s prepare the seaweed. Take 1 pack of laver (nori/gim). If it’s seasoned with salt, gently rinse it under cold running water a few times to remove excess salt. Be careful not to tear the delicate seaweed. After rinsing, place it in a colander to drain well. You can also gently squeeze out excess water with your hands.
Step 2
Peel the radish and julienne it into thin strips. Aim for about 0.3 cm thickness for the best texture. In a large bowl, combine the julienned radish with 1 Tbsp minced garlic, 1 Tbsp gochugaru, 1 Tbsp anchovy sauce, 1 Tbsp tuna extract, and 1 Tbsp oligosaccharide. Gently mix everything together with your hands, ensuring the seasoning coats the radish evenly. Feel free to adjust the amount of gochugaru to your spice preference.
Step 3
Now, add the drained seaweed to the bowl with the seasoned radish. Gently toss and mix everything together. Be careful not to mash the seaweed. The goal is to distribute the seasoning evenly among the radish and seaweed. You can adjust the ratio of radish to seaweed based on your preference; more radish for extra crunch, more seaweed for a stronger ocean flavor.
Step 4
Finally, transfer the mixed salad to a serving dish and sprinkle with a pinch of sesame seeds. Your delicious and refreshing Muparae Muchim is ready! It’s great served immediately, but chilling it in the refrigerator for a short while can enhance its refreshing taste. It makes a wonderful side dish for any meal or even a light snack.
