Pizza Crust & Toppings- 3 medium potatoes
- 3 Tbsp potato starch
- 3-4 Tbsp cooking oil (for frying)
- 8 Tbsp tomato sauce (store-bought or homemade)
- 2 Tbsp tomato ketchup
- 140g mozzarella cheese (about 1 cup)
- 2 slices cheddar cheese
- Parmigiano Reggiano cheese or grated Parmesan cheese (to taste)
- 1 cherry tomato (or sliced regular tomato)
- 1/2 onion (thinly sliced)
- About 10 fresh basil leaves
Cooking Instructions
Step 1
First, carefully remove any sprouts and the peel from the potatoes. Then, using a mandoline slicer or a knife, thinly julienne the 3 potatoes. Using a mandoline will make this process much faster and ensure uniform slices.
Step 2
Place the julienned potatoes in a bowl of cold water and let them soak for about 10 minutes. This step is crucial for removing excess starch from the potatoes, which will help achieve a crispier crust and a cleaner flavor.
Step 3
Drain the potatoes thoroughly using a colander. Once they are completely dry, add the 3 tablespoons of potato starch and toss gently until each strand is evenly coated. Ensuring the starch adheres well will contribute to a chewier texture in the finished crust.
Step 4
Heat 3-4 tablespoons of cooking oil in a non-stick skillet over medium heat. Spread the coated potato mixture thinly and evenly in the pan. Pan-fry the potato crust, flipping occasionally, for about 7-10 minutes until both sides are golden brown and crispy. A crispy edge is key to a satisfying pizza base.
Step 5
Once the potato crust is beautifully fried, spread 8 tablespoons of tomato sauce evenly over the surface. Then, mix in 2 tablespoons of tomato ketchup and spread that as well. Make sure the sauce covers the potato base well for optimal flavor distribution.
Step 6
Now it’s time for the toppings! Arrange your desired ingredients over the sauce. Thinly sliced cherry tomatoes (or regular tomato slices) and thinly sliced onions are a great start. Feel free to add cooked meats like ham, bacon, chicken, or other vegetables like bell peppers for a more substantial pizza.
Step 7
Carefully transfer the topped potato crust to a serving plate or a pizza pan. Generously sprinkle 2 slices of cheddar cheese and 140g of mozzarella cheese all over the toppings. Don’t be shy with the cheese; ample cheese ensures a wonderfully melted and gooey finish.
Step 8
Place the pizza in the microwave and heat for approximately 10 minutes. The pizza is ready when the cheese is fully melted, bubbly, and wonderfully fragrant. Cooking times may vary slightly depending on your microwave’s power.
Step 9
Finally, garnish your delicious potato pizza with fresh basil leaves torn into pieces. For an extra touch of authentic Italian flavor, grate some Parmigiano Reggiano cheese or sprinkle grated Parmesan cheese over the top. Enjoy your homemade, crispy potato pizza!
