  • 1 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp fish sauce (anchovy or sand lance)
  • 1 Tbsp plum extract (maesilcheong)
  • 1 tsp minced garlic
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, wash the persimmon thoroughly under running water. Use a knife to carefully remove the stem, then peel the skin thinly.

Step 2

Cut the peeled persimmon into bite-sized cubes, similar to how radish for kkakdugi is cut. Avoid cutting them too small, as this can diminish the satisfying crunch.

Step 3

Wash the green onion and finely chop it, focusing mainly on the white parts. Using young green onions will add a more fragrant aroma.

Step 4

In a small bowl, combine 1 Tbsp red pepper flakes, 1 Tbsp fish sauce, 1 Tbsp plum extract, 1 tsp minced garlic, and 1 Tbsp toasted sesame seeds. Mix well to create the seasoning paste. Let it sit for a moment to allow the flavors to meld.

Step 5

In a larger bowl, add the cubed persimmon and the prepared seasoning paste. Gently toss the persimmon to coat it evenly with the seasoning, being careful not to mash the fruit.
