Main Ingredients- 1 bag frozen dumplings (approx. 10-12 pieces)
- 1 serving somen noodles (spinach somen or regular somen) (approx. 100g)
- 1/4 head cabbage
- 1/2 onion
- 1 handful crown daisy (chukury) (approx. 30g)
- 2 cheongyang peppers
- 1 red chili pepper
- Generous amount of cooking oil
- Pinch of salt (for boiling noodles)
Special Bibim Sauce- 1 Tbsp soy sauce
- 2 Tbsp gochujang (Korean chili paste)
- 4 Tbsp gochugaru (Korean chili flakes)
- 5 Tbsp vinegar
- 1 Tbsp minced garlic
- 2 Tbsp brown sugar
- 2 Tbsp maesil cheong (Korean plum extract)
- 2 Tbsp corn syrup (or rice syrup)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1 Tbsp soy sauce
- 2 Tbsp gochujang (Korean chili paste)
- 4 Tbsp gochugaru (Korean chili flakes)
- 5 Tbsp vinegar
- 1 Tbsp minced garlic
- 2 Tbsp brown sugar
- 2 Tbsp maesil cheong (Korean plum extract)
- 2 Tbsp corn syrup (or rice syrup)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Prepare all the necessary ingredients for your delicious Bibim Guksu with Pan-Fried Dumplings. Wash all vegetables thoroughly.
Step 2
Peel the onion and slice it thinly into julienne strips. Slice the red and cheongyang peppers thinly on an angle, removing the seeds. Cut the cabbage into bite-sized pieces. Tear the crown daisy into roughly hand-sized pieces. Having your vegetables prepped makes the next steps much smoother.
Step 3
Boil the spinach somen noodles (or regular somen) in plenty of water. Once the water comes to a rolling boil, add about 1 cup of cold water and bring it back to a boil. Repeat this process about two more times (boiling three times in total). As soon as the noodles are cooked to your liking, drain them immediately and rinse thoroughly under cold running water to achieve a perfectly chewy texture. Drain them well in a colander to remove excess water. This ensures the noodles don’t become mushy or clump together.
Step 4
Now it’s time to make the delicious Bibim sauce! In a bowl, combine 1 Tbsp soy sauce, 2 Tbsp gochujang, 4 Tbsp gochugaru, 5 Tbsp vinegar, 1 Tbsp minced garlic, 2 Tbsp brown sugar, 2 Tbsp maesil cheong, and 2 Tbsp corn syrup. Finish by adding 1 Tbsp sesame oil and 1 Tbsp toasted sesame seeds. Whisk or stir well until all ingredients are thoroughly combined. The sauce ratio is key, so follow it closely!
Step 5
Add the prepared cabbage, onion, crown daisy, red chili pepper, and cheongyang pepper to a bowl. Add about 2/3 of the prepared Bibim sauce to the vegetables. (The remaining 1/3 is for serving later.)
Step 6
Gently toss the vegetables with the sauce until they are evenly coated. Be careful not to overmix, as this can make the vegetables mushy. The goal is to maintain their crispiness. This creates a wonderfully crunchy and flavorful vegetable salad.
Step 7
Heat a frying pan over medium heat and add a generous amount of cooking oil. Place the frozen dumplings one by one in the hot oil. Pan-fry them, flipping occasionally, until they are golden brown and crispy on all sides. Cooking them over medium-low heat allows the inside to cook through while achieving a perfectly crisp exterior.
Step 8
Arrange the cooked pan-fried dumplings and the boiled somen noodles on a serving plate. Place the remaining 1/3 of the Bibim sauce in a small dish or ramekin on the side. You can also serve the mixed vegetables separately on another plate.
Step 9
It’s time to enjoy! The chewy somen noodles are delicious paired with the crispy dumplings. Alternatively, you can mix the somen noodles with the Bibim sauce and enjoy them with the dumplings on the side. Or, for a fully mixed experience, combine everything together!
