Main Ingredients

  • 2 Mackerels
  • 2 Cheongyang peppers (spicy peppers)
  • 3 Scallions

Seasoning & Frying Ingredients

  • A pinch of herb salt
  • 2 cups Frying powder
  • 4 Tbsp Soy sauce
  • 6 Tbsp Ketchup
  • 2 Tbsp Water
  • 2 Tbsp Plum extract
  • 6 Tbsp Corn syrup
  • 3 Tbsp Cooking oil (for simmering sauce)
  • 2 Tbsp Minced garlic
  • A pinch of sesame seeds
  • 4 Tbsp Mirin (cooking sake)
  • 1 tsp Black pepper

Cooking Instructions

*Thoroughly remove all bones from the mackerel. Soak the fillets in milk or rice water for about 30 minutes to eliminate any fishy odor. After soaking, lightly sprinkle herb salt on both sides of the mackerel for seasoning.

Cut the seasoned mackerel into bite-sized pieces. Using scissors makes it easy and neat to cut the boneless fish fillets.

Place 2 cups of frying powder into a doubled plastic bag. Add the cut mackerel pieces and shake well until evenly coated with the powder. Using a double bag helps prevent the powder from spilling.

Heat a pan with a generous amount of cooking oil over medium-low heat. Gently cook the mackerel pieces coated in frying powder until they start to turn golden. (Pan-frying gives a much crispier and more delicious result).

Flip the mackerel pieces and continue to cook until both sides are golden brown and crispy. It’s important to achieve a nice crispiness on the exterior.

While the mackerel is cooking, prepare the delicious gangjeong sauce. In a small pot, combine 4 Tbsp soy sauce, 4 Tbsp mirin, 6 Tbsp ketchup, 2 Tbsp minced garlic, 6 Tbsp corn syrup, 2 Tbsp plum extract, 2 Tbsp water, and 1 tsp black pepper. Mix well. Add 3 Tbsp cooking oil and bring the sauce to a rolling boil over high heat.

Once the sauce is boiling, reduce the heat to low. Add the cooked mackerel pieces to the sauce and gently toss them back and forth to coat evenly. Once the sauce has thickened and coats the mackerel nicely, add the chopped scallions and cheongyang peppers, toss lightly one more time, and immediately turn off the heat. Sprinkle with sesame seeds for a final touch. Your delicious, crispy Mackerel Gangjeong, loved by the whole family, is ready!
