  • Potato Starch or Corn Starch 2 Tbsp
  • Butter 2 Tbsp

Salmon Marinade

  • Cooking Sake (or Mirin) 5 Tbsp
  • Herb Salt to taste (or 1 tsp Salt + a pinch of Pepper)

Homemade Tartar Sauce

  • Mayonnaise 3 Tbsp
  • Plain Yogurt 1 Tbsp (optional)
  • Oligosaccharide (or Honey) 1 Tbsp
  • Finely minced Onion 1 Tbsp
  • Finely minced Pickles (Dill pickles recommended) 1 Tbsp
  • Fresh Lemon Juice 2 Tbsp
  • Pepper to taste
  • Dried Parsley Flakes to taste

Cooking Instructions

Step 1

Let’s start by making the delicious homemade tartar sauce! Finely mince the pickles and onion. In a bowl, combine the minced pickles and onion with mayonnaise, plain yogurt (you can omit this if you don’t have it), oligosaccharide (or honey), lemon juice, pepper, and parsley flakes. Mix everything well until thoroughly combined. Your flavorful tartar sauce is ready!

Now, let’s prepare the side vegetables that will perfectly complement the salmon steak. Slice the onion into large, bite-sized pieces for a pleasant texture. If you’re using frozen cauliflower, thaw it first, then rinse it lightly under running water and break it into florets. Feel free to add other vegetables like broccoli, green beans, or bell peppers to your preference.

It’s time to sauté the vegetables. Heat 1/2 Tbsp of butter in a frying pan over medium heat. Add the large onion pieces and sauté until they become slightly translucent. Once the onions start to soften, sprinkle with herb salt to season. Add the cauliflower florets about 30 seconds before turning off the heat and give it a quick stir-fry. This method ensures the vegetables remain slightly crisp.

Now for the crucial step: preparing the salmon. Pat the fresh salmon fillet dry with paper towels. Sprinkle evenly with 5 Tbsp of cooking sake and herb salt (or regular salt and pepper) on both sides. Let it marinate for 30 minutes, flipping it halfway through to ensure the seasoning penetrates evenly. (The salmon I used was about 2.5cm thick and 7cm long.)

Just before cooking, lightly coat the marinated salmon fillets with potato starch or corn starch on all sides. This coating will help create a wonderfully crispy exterior and keep the salmon juicy on the inside.

Heat a non-stick frying pan over medium-high heat and add 1 Tbsp of butter. Place the prepared salmon fillets in the pan and sear each side for approximately 15 seconds only. For a 2.5cm thick fillet, 15 seconds per side is ideal. If your salmon is about 2cm thick, reduce the searing time to 10 seconds per side. The goal is to get a golden-brown crust while keeping the inside rare and tender.
