First, trim the ends off the eggplants. Then, slice the eggplants into thick pieces, about 0.7 to 0.8 cm thick. Make ‘X’ shaped cuts on the cut surface of each eggplant slice. This scoring allows the seasoning to penetrate deeply into the eggplant as it cooks, making it even more delicious.

Finely chop the green onion. This will be added to the seasoning. Adding green onion will enhance the aroma and flavor of the sauce.

In a wide bowl, combine the chopped green onion, 3 Tbsp soy sauce, 1 Tbsp chili powder, 1 Tbsp corn syrup or rice syrup, 1/2 Tbsp minced garlic, and 2 Tbsp water. Mix well.
