Main Ingredients

  • 1/2 block Tofu (approx. 150g)
  • 2 Tbsp minced onion
  • 2 Tbsp canned corn (drained)
  • 2 Tbsp minced carrot
  • 1 cup breadcrumbs (5 Tbsp for the mixture, the rest for coating)
  • 3 Tbsp egg whites
  • 5 cups vegetable oil (for deep-frying, approx. 1 liter)
  • Salt to taste
  • Pepper to taste

Cooking Instructions

Step 1

Start by removing as much moisture from the tofu as possible. You can wrap it in cheesecloth and squeeze firmly, or microwave it for about 1 minute to dry it out before mashing. For best results, place the mashed tofu in a sieve to drain any remaining liquid.

In a bowl, combine the mashed tofu with the drained canned corn, finely minced carrot, and finely minced onion. Add 5 tablespoons of breadcrumbs, egg whites, a pinch of salt, and a pinch of pepper. Knead the mixture with your hands until it becomes sticky and well-combined, which will make it easier to shape.

Take portions of the kneaded mixture and shape them into your desired size and form, such as round or slightly flattened patties. Gently press them with your palm to form. Coat each shaped croquette thoroughly with breadcrumbs, ensuring an even layer. This step is crucial for achieving that perfect crispy exterior.

Heat a generous amount of vegetable oil in a deep pan or pot to about 170°C (340°F). You can test the oil temperature by dropping a few breadcrumbs; they should sizzle and float immediately. Carefully place the breaded croquettes into the hot oil, ensuring not to overcrowd the pan. Fry them, turning occasionally, until they are a beautiful golden brown on all sides. Avoid frying at too high a heat, as this can burn the outside while leaving the inside undercooked. Frying over medium heat allows the inside to cook through evenly. Once golden and crispy, remove the croquettes and place them on a wire rack or paper towels to drain excess oil. This will help them stay extra crispy!
