Crispy Outside, Moist Inside Basic Scones
Easy Basic Plain Scone Recipe for Everyone
Late at night, I suddenly craved scones and decided to make some! Here’s my recipe for basic scones that are wonderfully crispy on the outside and delightfully moist on the inside. You can easily enjoy these delicious scones right at home. If you add nuts or dried fruits to this basic recipe, you’ll create even more diverse scones. Even if you’re making scones for the first time, you’ll succeed by following this recipe! If you bake them in the evening and enjoy them with jam or butter in the morning, they make a satisfying breakfast option. They’re also a convenient choice for busy mornings or as a simple breakfast for children.
Scone Making Ingredients- 250g cake flour
- 75g cold unsalted butter
- 2 tsp sugar
- 1 tsp salt
- 1 tsp baking powder
- 70g cold milk
- 1 egg yolk
- 10g water (for egg wash)
Cooking Instructions
Step 1
Sift the cake flour into a large bowl.
Step 2
Sift the baking powder over the flour. (Sifting the dry ingredients together helps create softer scones without lumps.)
Step 3
Add the salt.
Step 4
Add the sugar and gently mix the dry ingredients together with a whisk or spatula until evenly combined.
Step 5
Cut the cold unsalted butter into approximately 1cm cubes. (The colder the butter, the better the scone’s texture will be.)
Step 6
Add the cold butter cubes to the bowl with the dry ingredients. Use a pastry blender, a bench scraper, or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs, like small peas. Work quickly to prevent the butter from melting.
Step 7
Make a well in the center of the flour and butter mixture and pour in the cold milk.
Step 8
Gently mix with a spatula or scraper just until the dough comes together into a single mass. Be careful not to overmix, as this can make the scones tough.
Step 9
Wrap the dough tightly in plastic wrap or place it in a container and refrigerate for at least 30 minutes. (Chilling the dough helps the scones maintain their shape when baking.)
Step 10
Remove the chilled dough from the refrigerator. Lightly dust your work surface with flour (all-purpose or cake flour) and gently roll out the dough with a rolling pin to about 1.5cm (approximately 0.6 inches) thickness. (Rolling the dough too thin can result in hard scones.)
Step 11
Cut the dough into your desired serving sizes. You can use a knife for straight cuts or cookie cutters or glasses for shapes. (Leaving the cut surfaces as they are will help the scones rise nicely.)
Step 12
In a small bowl, whisk together the egg yolk and 10g of water to create an egg wash.
Step 13
Gently brush the tops of the cut scones with the prepared egg wash. (The egg wash gives the scones a beautiful golden-brown color when baked.)
Step 14
Bake in a preheated oven at 170°C (340°F) for about 15 minutes, or until golden brown. Baking times and temperatures may vary depending on your oven, so adjust as needed.
