Key Ingredients- 6 medium potatoes
- 1/2 medium onion
- 1/4 medium carrot
- 100g Spam (or your favorite ham)
- 195g canned corn
- Pinch of salt
- Pinch of black pepper
- 2 cups all-purpose flour
- 2 large eggs
- 2 cups panko breadcrumbs
- Pinch of dried parsley flakes (optional)

Step 1
Let’s prepare the filling for our croquettes. Finely dice the onion, carrot, and Spam (or ham). Drain the canned corn thoroughly by placing it in a sieve. Finely dicing the ingredients will help the filling hold together better when shaping the croquettes.

Now, let’s sauté these ingredients. Heat a lightly oiled pan over medium heat. Add the diced onion, carrot, and Spam (or ham). Sauté for about 5 minutes until the vegetables are softened and slightly translucent. The Spam will release some fat, so you won’t need much additional oil.
