Main Ingredients

  • 450g pork belly, whole piece
  • 2 Tbsp olive oil
  • Pinch of herb salt
  • 14 whole garlic cloves

Cooking Instructions

Score the skin of the pork belly in a diamond pattern, making cuts about 2-3mm deep. This scoring helps the skin become extra crispy and ensures the meat cooks evenly. You can also lightly score the bottom side.

Brush both sides of the scored pork belly with olive oil. Then, generously season both sides with herb salt to enhance the meat’s flavor. After this initial seasoning, let the pork belly rest in the refrigerator for about 10 to 20 minutes. This resting period allows the flavors to penetrate deeper.

Line an oven pan with parchment paper and place the seasoned pork belly on it. Roast in a preheated oven at 190°C (375°F) for about 1 hour. This initial roasting time is crucial for the overall cooking of the meat.

halfway through the 1-hour roasting time, approximately 30 minutes in, carefully remove the oven pan and flip the pork belly over. This ensures that both the skin and the bottom surface achieve a beautiful, even crispiness.

With about 20 minutes remaining in the cooking time, add 12 whole garlic cloves to the oven pan alongside the pork belly. Roasting the garlic with the pork will make it tender and deliciously caramelized, perfect for serving together. (The remaining 2 cloves are from earlier preparation.)

Once the pork belly is well-roasted, carefully remove it from the oven and slice it into bite-sized pieces, about 1 to 1.5 cm thick. Check the cut surface; if any part still appears pink and undercooked, return it to the oven for a few more minutes to ensure it’s fully cooked through. Thorough cooking is essential.
