Cooking Instructions

Step 1

Start by thoroughly washing the sweet potatoes under running water. Since we’ll be cooking them with the skin on, ensure all dirt and debris are removed. If there are any rough spots or bruised areas on the skin, you can gently trim them away with a knife. Leaving the skin on preserves nutrients, so it’s highly recommended!

Step 1

Step 2

Place the washed sweet potatoes in a steamer basket and steam them over boiling water for about 10-15 minutes, or until a fork can be inserted with slight resistance. Avoid overcooking, as this can make them fall apart when slicing. (Note: Hosbak sweet potatoes tend to yield a softer texture, while bam sweet potatoes are excellent for achieving a crispier finish in the air fryer.)

Step 2

Step 3

Once slightly cooled, slice the steamed sweet potatoes into uniform, thin rounds, about 0.5 cm thick. The thinner you slice them, the crispier and more evenly they will cook in the air fryer. Slicing them while still warm but not hot will help prevent them from breaking apart.

Step 3

Step 4

Arrange the sweet potato slices in a single layer in your air fryer basket, making sure they don’t overlap. Air fry at 180°C (350°F) for 15-20 minutes. Cooking times can vary depending on your air fryer model and the thickness of the slices, so check them halfway through and adjust the time as needed. They’re ready when they are golden brown and slightly caramelized around the edges.

Step 4

Step 5

Voilà! You now have beautifully roasted sweet potatoes with a delightful crispy exterior and a soft, sweet, and creamy interior. Freshly air-fried, they resemble candied sweet potatoes (gat-tang) in flavor and texture, offering a unique charm that differs from simply baking them. Enjoy them while they’re warm for the absolute best taste experience!
