Crispy Outside, Chewy Inside! Homemade Coconut Cookie Recipe
Easily make delightful coconut cookies with a satisfying crispy exterior and a tender, chewy center!
These coconut cookies boast a wonderful texture: crispy on the outside and delightfully moist on the inside right after baking. If stored in an airtight container at room temperature, they transform into even softer and chewier cookies by the next day. Perfect for home baking occasions or as a sweet gift for loved ones.
Cookie Dough Ingredients- 115g unsalted butter, softened completely to room temperature
- 1/2 tsp fine salt
- 100g granulated sugar (brown sugar can be used for a different flavor profile)
- 1 large egg, at room temperature
- 100g all-purpose flour, sifted beforehand
- 70g desiccated coconut powder
- 1 tsp vanilla extract
Cooking Instructions
Step 1
1. In a mixing bowl, combine the fully softened butter with the fine salt and granulated sugar. Using an electric mixer or a whisk, cream them together until light and fluffy, resembling a smooth paste. (Ensure the butter is truly soft to achieve proper creaming; cold butter will make this difficult.) 2. Add the fragrant vanilla extract to the creamed mixture and stir until well incorporated.
Step 2
3. Crack the room-temperature egg into the bowl. Whisk thoroughly until the egg is fully blended with the butter mixture and no separation occurs. (Using a cold egg can cause the mixture to curdle, so room temperature is essential.)
Step 3
4. Sift the pre-sifted all-purpose flour and desiccated coconut powder directly over the butter mixture. Using a spatula, gently fold the dry ingredients into the wet until just combined and no dry streaks remain. Be careful not to overmix, as this can result in tough cookies.
Step 4
5. Using a spoon or an ice cream scoop, portion out the dough and place spoonfuls onto a baking sheet lined with parchment paper, leaving some space between each cookie. (Using a scoop ensures uniform cookie size.) If the dough is sticky, lightly dust your hands or the spoon with flour. Then, gently press each mound with the back of a fork to create a decorative crosshatch pattern. This step helps the cookies maintain their shape while baking.
Step 5
6. Bake in a preheated oven at 180°C (350°F) for approximately 15 minutes. The cookies are ready when their edges turn a light golden brown and a rich coconut aroma fills the air. Adjust baking time as needed based on your oven’s performance.
