Loved by everyone from kids to adults! Enjoy the irresistible sweet, spicy, and savory combination of chewy rice cakes and plump sausages, conveniently made in your air fryer. Achieve the perfect texture – crispy on the outside, delightfully chewy on the inside – with this simple homemade recipe.
Main Ingredients- 12 Tteokbokki rice cakes (quantity adjustable to your preference)
- 9 Small sausages (Vienna sausages or similar recommended)
Special Sauce- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Soy sauce
- 2 Tbsp Ketchup
- 2 Tbsp Oligodang (corn syrup) or mulyeot (rice syrup)
- 0.5 Tbsp Minced garlic
- 0.5 Tbsp Sugar
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Soy sauce
- 2 Tbsp Ketchup
- 2 Tbsp Oligodang (corn syrup) or mulyeot (rice syrup)
- 0.5 Tbsp Minced garlic
- 0.5 Tbsp Sugar
Cooking Instructions
Step 1
First, let’s make the delicious sauce that will define the taste of your sotteok-sotteok. In a bowl, combine 1 tablespoon of gochujang, 1 tablespoon of soy sauce, 2 tablespoons of ketchup, 2 tablespoons of oligodang, 0.5 tablespoon of minced garlic, and 0.5 tablespoon of sugar. Mix them thoroughly with a spoon until well combined. Stirring until the sugar and oligodang are dissolved will result in a smoother sauce.
Step 2
Prepare the rice cakes and sausages. If your tteokbokki rice cakes are hard, briefly blanch them in boiling water to soften them (about 1 minute). Cooking them in a soft state ensures a perfectly chewy texture. Lightly blanching the sausages in hot water also helps remove excess oil and makes them cleaner to eat. I used 12 tteokbokki rice cakes and 9 small sausages. Feel free to adjust the quantities according to your preference.
Step 3
Now, thread the prepared rice cakes and sausages onto skewers, alternating them. Skewer them in the order of rice cake -> sausage -> rice cake. Threading three rice cakes and three sausages alternately will create a beautiful presentation. Please be careful of the sharp ends of the skewers to avoid injury.
Step 4
It’s time to cook them in the air fryer. Arrange the skewered sotteok-sotteok in a single layer in the air fryer basket. Cook at 200°C (390°F) for 5 minutes. After 5 minutes, flip the sotteok-sotteok over and cook for another 5 minutes at 200°C (390°F). This initial cooking process will slightly brown the rice cakes and cook the sausages, improving their texture.
Step 5
Brush the pre-made sauce evenly over the sotteok-sotteok that have been browned on both sides. Using a pastry brush will make it easier to apply the sauce uniformly. After coating with sauce, place them back into the air fryer and cook at 180°C (350°F) for an additional 5 minutes. This step allows the sauce to penetrate well and caramelize slightly, making them even more appealing. * Please note that air fryer temperatures and cooking times can vary by model. Check the sotteok-sotteok periodically and adjust as needed to prevent burning.
