First, clean the chickens by removing any internal organs and blood. To tenderize the meat and remove any gamey odor, soak the chickens in milk for about 30 minutes. After the milk bath, rinse the chickens thoroughly with clean water and pat them dry.

Generously season the cleaned chickens with coarse salt and black pepper, ensuring an even coating. Allow the seasoned chickens to rest in the refrigerator for at least 30 minutes; this resting period will enhance the flavor.
